You guys, my lunch game was in a RUT. Same sad salad, same boring wrap, over and over. Then I made these pockets and my whole week got better.

This is not a sad desk lunch. This is a STUFFED pita situation. We’re talking juicy, oregano-kissed grilled chicken, a crunchy salad with cucumber, tomato, and red onion, salty feta, briny olives, and a bright minty dressing that ties it all together.

How to Keep Pitas From Getting Soggy

(*Seriously, use a meat thermometer, dry chicken ruins everything.*) For the broiler route, place the chicken on a sheet pan 6 inches from the heat for the same time. WATCH IT CLOSELY though, broilers go from charred to cremated in seconds.

For the pitas, skip the grill char and toast them in a dry skillet for 30 seconds per side, or pop them in the toaster. Warm + slightly crispy is the goal. Stuff and devour!

Step 1: Chop Veggies and Marinate Chicken

  • 1.25 lb chicken, cut into 1-inch chunks
  • 1.5 tbsp olive oil
  • 1 large garlic clove, minced
  • 1.25 tsp oregano
  • 1/2 lemon, juiced
  • salt to taste
  • pepper to taste
  • 1.5 large cucumber, peeled and diced
  • 1 cup yellow grape tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup fresh mint, chopped
  • 1/2 cup feta crumbles
  • 1/4 cup kalamata olives
  • 2 large garlic cloves, minced
