Method
 

  1. Finely shred the zucchini using a box grater or food processor, then place it in a clean kitchen towel and squeeze firmly to remove as much moisture as possible—this is crucial for preventing wet, dense muffins. While you're working on the zucchini, preheat your oven to 375°F and line a standard 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and instant espresso powder. Whisking rather than just stirring helps distribute the leavening agents evenly and breaks up any cocoa lumps, which ensures consistent chocolate flavor throughout the muffins. Set this dry mixture aside.
  3. In a large bowl, whisk together the eggs, sugar, milk, oil, and vanilla extract until well combined and slightly lighter in color. This aerates the mixture slightly and helps create a more tender crumb. I like to add the vanilla last and stir it in gently—it helps preserve the delicate aroma that will enhance the chocolate flavor in the finished muffins.
  4. Pour the dry ingredient mixture from Step 2 into the wet ingredient base from Step 3. Using a spatula or wooden spoon, fold the dry ingredients into the wet ingredients with just a few gentle strokes until the flour mixture is barely visible—overmixing at this stage develops gluten and results in tough, dense muffins. A few small lumps are completely fine and actually desirable.
  5. Gently fold the squeezed-dry zucchini from Step 1 and the chocolate chips into the batter using just a few strokes until evenly distributed. The zucchini adds moisture and a subtle earthiness that deepens the chocolate flavor, while the chips create pockets of melted chocolate throughout. Don't overstir—keep the batter slightly lumpy for the best texture.
  6. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. This leaves room for the muffins to rise without overflowing.
