High Protein Greek Yogurt Brownies

Ingredients
  

  • 1 cup greek yogurt (I prefer Fage Total 0% for the best thick consistency)
  • 1 extra large egg (room temperature, about 70°F, helps the batter emulsify)
  • 1/2 cup cocoa powder
  • 1/2 cup protein powder (I always use Optimum Nutrition Gold Standard whey)
  • 1/4 cup coconut sugar
  • 1/4 teaspoon baking powder
  • Some chocolate chips (optional)

Method
 

  1. Set the oven temperature to 350°F. Line an 8 x 8-inch baking dish with parchment paper or gently coat it with cooking spray while it cooks.
  2. The room temperature egg, Greek yogurt, cocoa powder, protein powder, coconut sugar, and baking powder should all be combined in a medium-sized mixing bowl.
  3. Using a spatula, evenly distribute the batter from Step 2 into the prepared pan. You will want the batter to be dense and thick. Sprinkle a few chocolate chips on top of the batter—this is optional. A toothpick inserted in the center should come out with only a few moist crumbs (not wet batter) after 20 to 25 minutes of baking.
  4. Before cutting, take the brownies out of the oven and allow them to cool in the pan for at least fifteen minutes.
