Summer corn + salty feta + lime = something I’ll be making on repeat until September. Calling it now.
I almost didn’t post this because it feels almost TOO easy. Just chop stuff, toss it together, done. But then I brought it to a friend’s backyard hang and the bowl was scraped clean in like four minutes flat. So. Here we are. The recipe you didn’t know you needed.
Sweet corn, creamy avocado, crumbled feta on top (don’t skip the feta, I’m serious), a little smoked paprika in the back doing its quiet thing. It’s summer in a bowl. With chips.
Fresh vs. Frozen Corn: Does It Matter?
Fresh corn wins here, hands down. The kernels pop with sweetness and hold their CRUNCH in the salsa, which is exactly what you want against creamy avocado and salty feta.
Pick ears with tight green husks, slightly damp silks, and kernels that release milky liquid when you pierce them. Boil 5 minutes, cool, then slice off the cob (stand it upright in a bowl to catch runaway kernels).
Frozen corn works in a pinch, but choose PLAIN kernels (not the “heat and eat” cob kind) and thaw them completely in a colander. Pat them DRY with paper towels so they don’t water down the salsa.
How to Keep Avocado from Browning
- Dice the avocado LAST and fold it in just before serving…. this is the single biggest thing you can do!
- Coat those cubes in LIME JUICE thoroughly, not a quick drizzle, actually toss them so every surface is covered. The acid slows oxidation dead in its tracks.
- Leave the PIT in the salsa if you’re not eating it all at once (yes, it actually helps, no, it’s not just a myth… mostly).
- Press plastic wrap DIRECTLY onto the surface of the salsa, no air gaps, so oxygen can’t reach the avocado.
- Add a thin layer of lime juice or olive oil on top before sealing…. creates a barrier against air.
- Keep the salsa COLD in the fridge and use it within 24 hours, because nothing on this list lasts forever!
- Pick avocados that are FIRM but ripe, not mushy, since softer flesh browns way faster.
How Far Ahead Can You Make This?
- MAKE THE BASE UP TO 24 HOURS AHEAD….corn, onion, pepper, jalapeño, cilantro, lime, oil, and paprika hold up great. Flavors get BETTER with time!
- AVOCADO, TOMATO, AND FETA GO IN LAST….trust me, don’t add them early. Avocado browns fast, tomatoes leak, feta gets weird.
- FINISHED SALSA LASTS 2 HOURS MAX….after that, soggy mess. For longer events, keep parts separate, assemble fresh batches as needed.

Ingredients
- 4 ears fresh corn
- 2 large vine-ripened tomatoes, diced
- 3/4 cup finely chopped red onion
- 1 red bell pepper, diced
- 1 large avocado (diced into 1/2-inch pieces)
- 1 jalapeño, seeded and minced
- 1 large handful fresh cilantro, chopped

Step 1: Boil and Shuck Corn
- 4 ears fresh corn

Drain the corn and spread it on a cutting board or plate to cool for a few minutes.
Once cool enough to handle, use a sharp knife to cut the kernels off the cob, working from top to bottom.
Transfer the corn kernels to a large mixing bowl.
Step 2: Dice the Fresh Produce
- 2 large vine-ripened tomatoes, diced
- 3/4 cup red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 large handful fresh cilantro, chopped
- 1 large avocado, diced into 1/2-inch pieces
While the corn cools, dice the tomatoes into bite-sized pieces, finely chop the red onion, dice the red bell pepper into similar-sized pieces, seed and mince the jalapeño, and roughly chop the fresh cilantro.
I find it helpful to keep the diced tomatoes separate until the very end to prevent the salsa from becoming watery—tomatoes release liquid as they sit, so adding them last keeps the texture fresh.
Cut the avocado in half, remove the pit, and dice it into roughly 1/2-inch pieces, setting it aside on a separate plate.
Step 3: Dress and Season Base
- corn kernels from Step 1
- red onion, red bell pepper, jalapeño, and cilantro from Step 2
- 4 tbsp fresh lime juice
- 1 tbsp extra-virgin olive oil
- 1/4 tsp smoked paprika
Add the chopped red onion, diced red bell pepper, minced jalapeño, and chopped cilantro to the bowl with the corn kernels.
Drizzle with the fresh lime juice and extra-virgin olive oil, then sprinkle with the smoked paprika.
Gently toss everything together to combine and allow the flavors to meld for 1-2 minutes.
I like to add the lime juice and oil early so the onion and pepper can soften slightly and absorb those bright flavors.
Step 4: Fold in Final Ingredients

- diced tomatoes from Step 2
- diced avocado from Step 2
- 3.5 oz feta cheese, crumbled
Just before serving, gently fold in the diced avocado and the diced tomatoes to keep them from breaking down and releasing excess liquid.
Top the salsa with the crumbled feta cheese.
Taste and adjust seasoning with salt and pepper if needed.
Serve immediately while everything is fresh and the avocado is at its best.
