These are jalapeño popper tortilla roll ups. Cream cheese, pepper jack, bacon, jalapeños (yes, the bacon is extra crispy on purpose)…. all rolled up in flour tortillas, chilled, sliced into pinwheels. The scallion on top is non-negotiable. Cold app that ACTUALLY delivers.

Make-Ahead & Storage Tips
These roll ups are BUILT for making ahead. The two-hour chill time isn’t optional anyway, so wrap them up the night before and let the fridge do the work while you sleep.
Keep them tightly wrapped in plastic (or tucked into an airtight container) in the fridge for up to 2 days before slicing. Slice them early if you like, just arrange in a single layer with parchment between layers to prevent sticking.
Freezing works too. Roll, wrap individually in plastic, then foil, and stash for up to one month. Thaw overnight in the fridge before slicing. NEVER freeze after slicing (soggy disaster waiting to happen).
How to Keep Roll-Ups from Falling Apart
Roll-ups collapse when the filling is loose, the roll is sloppy, or you slice too early. Lock them down with these moves:
- Soften cream cheese FULLY (cold lumps won’t bind the other ingredients together).
- Spread 2-3 tablespoons only and roll SNUGLY, keeping filling tucked with no air gaps.
- Wrap each tortilla TIGHTLY in plastic wrap before chilling to compress the shape into a firm log.
- Refrigerate at least 2 hours… longer equals cleaner slices, so overnight works beautifully.
- Wipe your knife between cuts so sticky filling doesn’t drag and tear the tortilla walls.
